De Waaghals is a high-end vegetarian restaurant in the Pijp and already exist since 1981. The restaurant has an informal vibe with creative and refined dishes. I joined De Waaghals before the current staff was born. So I still had a somewhat romantic image from the past with which I visited, about 40 years later. The case looks neat. The discovery of "the surprise menu" turns out to be an upgrade to haute cuisine. The dishes are truly works of art in themselves and are explained at the table by an English-speaking waitress. OK, everything is refined in taste, the staff is friendly. The big surprise only came at checkout. First we were asked for 4 courses while we had opted for 3. This was corrected, with apologies. However, I am still a bit taken aback by the € 99.00 that had to be paid for 2 x 3 course menu with 2 x 1 non-alcoholic drink (so no fancy wines). Judging from the rave reviews, there is a target group with enough budget for De Waaghals 2.0, so it will certainly hold its own. But unfortunately this was our last visit. As Bob Dylan sang: the times they are a_changing...

Everything in this place says: potential, but unfortunately there is so much disappointing that you end up just eating 'good'. The dishes are beautifully prepared, but small in portion, so you will leave the restaurant with some appetite after a 4-course dinner. There was almost an hour (!) between courses and the glasses of wine 'pairing' were always poured half an hour before the dish. We went home more drunk than satisfied.

This was the second time I ate at De Waaghals. I have two different experiences. The first time was great! The food is of very good quality anyway, but we had to wait so long for our dishes that I was still hungry after 4 courses and then went to get some fries. Shame! Furthermore, very good vegan food and delicious wines.

Perhaps my review is a bit biased because we have eaten at De Waaghals before... But that is not without reason; the owners Eva and Martijn and chef Yuran (and the rest of the team) make it a true culinary feast, without any fancy fuss. The restaurant is accessible, everyone is up for a chat, it is cozy and 'warm'. The menu is a surprise every time. Only choices: three or four courses and vegetarian or completely vegan. For each dish, someone from the service or someone from the kitchen will tell you which ingredients were used and sometimes Martijn will explain how the dish was made. Very nice to hear. You feel the passion immediately. This restaurant is highly recommended because of the surprising dishes and the lovely people who work there. An 'experience' instead of 'eating something'. This is more than that.

Dinner in Oude Pijp at De Waaghals (the daredevil 😈). You can choose between a 3 or 4 course surprise menu veggie or vegan 🌱 They have a wide variety of great bio and vegan wines as well.

Atmosphere and staff were great. A perfect date night location.
